You calculate the average of the signal across all channels. You do this for each time point separately.
So this yields a vector of average signals, one value for each time point.
You then subtract this vector from each channel.
You signal is now referenced to the average signal.
For each time point, the average signal across channels now sums to zero.

If you stay at sensor level, using the average reference avoids having to make an (opinionated) pick of any electrode(s) to use as the reference.
If you go to source level (inverse modeling), the model error in the forward model will be zeroed out.
